Organic Roasted Chicken

Golden Beet Salad with Honey Apple Dressing














Preparation:

1. Trim, peel, and cut the beets into wedges.  Place the beets in a medium sized pot and cover with cold water and apple juice.  Bring to a boil, then reduce to a simmer.  Cook until the beets are tender when pierced with a fork, about 40 minutes. Remove from heat and drain thoroughly in a colander. 

2. When the beets are cooking, whisk together dressing ingredients in a medium sized bowl.

3. Add the cooked, drained beets to the dressing. Toss to coat and refrigerate for 15 minutes. 

4.  To serve, line 4 salad plates with greens. Divide the beets and cucumber slices into 4 servings and set on the greens. Top with goat cheese crumbles. Drizzle the remaining marinade over the salads and serve. 

Ingredients:

2 pounds medium sized fresh beets (golden, red, or a mix of the two
1 cup apple juice
1/2 pound spring mix greens
1/2 cup thinly sliced cucumber
4 oz goat cheese crumbles


​Dressing:

1/4 cup honey
2 TB vegetable oil
2 TB apple cider vinegar
2 tsp fresh garlic, minced
1/4 tsp dried oregano
1/4 tsp dried thyme

Do you have skills, abilities, and enthusiasm to contribute to its growth and success?

Are you interested in exploring possibly serving on the Board of Directors?

Harvest Moon is a member-owned cooperative governed by a seven person Board of Directors.  Directors are generally elected for three-year staggered terms.  We are currently seeking to identify candidates interested in serving on the Board both now and in the future.  

The Nominating Committee will be holding two informational sessions at the store where you can learn more about what Board service involves.  Come join us in the Deli area for light refreshments:

  • Monday, April 28 from 6-7:00 p.m.
  • Saturday, May 10 from 12:30-1:30 p.m.


If you're not able to make one of these times, just contact one of the members of the Nominating Committee and they will be happy to arrange another time to meet with you.
